Curry In A Hurry!!
Long grain brown rice, snowpeas, carrots, zuchini, garbonzos, onions, and another veggie/fruit that I can't remember the name of. (Kind of like a cross between an apple and dicon. It was chalked full of moisture and made for a very refreshing addition.) Topped with tempeh soaked in a sweet ginger marinade. Technically wasn't all that quick of a process, but I couldn't pass up the title "curry in a hurry."

School Lunch
I have mastered the art of cooking in the microwave at school.
Polenta, tomato sauce, kalamata olives on high for 2 minutes; fresh
baby spinach tossed in after. Mmm mmm ... Brain Food!

It's been too long....... We're Back!!!
Seared Polenta and Carribean Flavored Tofu Stack, on a bed of coconut yogurt and fresh lemon, honey, and EVOO dressed micro greens. All lightly doused with a sweet and spicy ginger marinade. Absolutely delicious!!

One of my all-time favorites.
Fresh fruit, whole oats, chopped almonds & walnuts... Topped with
plain yogurt and a drizzle of agave syrup for sweetness.

Prague treats
I only spent about 24 hours in Prague last week and made to sure to try out some of the city's specialties. The desserts are a chocolate cheesecake item called Misha (sp?) and the other one is a delicious layered honey cake which I can't remember the name. The pub food was a succulent roast , kind of corned pork, hearty chicken mushroom soup, thick dark beer and a aromatic drink that supposedly is made from 40 herbs.
