Looking through Culinaria Italy, Pasta-Pesto-Passion, got me thinking about what to do with the Swiss chard in the garden. So I slightly modified this foodnetwork recipe I found with the help of The Google. The chard lends a mild bitterness that works well with the sweet onions and tomato; with the addition of the somewhat briny kalamata olives and crunchy toasted pine nuts, the flavors are all over the mythical "taste map". No pecorino cheese, but I captured the authentic taste of Italy (said so right on the package) with some Sargento 6 Cheese Italian Cheese--a blend of Mozzarella, Provolone, Parmesan and Fontina, plus Romano and aged Asiago. My 10,000 taste buds approved.

Too Hot to Cook
It got up to 96 degrees about a week ago so I tried a couple recipes that would not heat up the kitchen. Both are from FoodNetwork dot com. Spiced Chicken and Grape Skewers by Elle Krieger and a refreshing Gazpacho by Ina Garten. If you're not into garlic (sorry Papadam), don't use big cloves, or use less in the Gazpacho. I ate some before going to the movie, and the place emptied out. Kidding.

Not Your Ordinary Potatoes 'n' Beans
Another one from eatingwell.com - Sweet Potato Fritters with Smoky Pinto Beans

Onion, poblano, spices, and black beans (instead of pintos) first.

Forming the sweet potato fritters.

Browning the fritters in the frying pan before they go in the oven.

Squeeze plenty of lime juice on them. Yummy.

Christmas Feast '09
Guess I'd better post this before the statute of limitations runs out. Two days of cooking fun. (All recipes were from the 2009 Sunset Holiday Cookbook, and all can be found online. Click on the links for the recipes and some nice pictures.)
Cider-Brined Pork Chops with Sautéed Apples
Brussels Sprouts with Parmesan and Pine Nuts
Cornbread and Gorgonzola Dressing
Overnight Soft Herb Rolls (which turned out more like focaccia)

Mexican Chocolate Pots de Crème

It was the first time I've made Crème fraiche--it's surprisingly easy. It was used in the Pork Chop recipe and on top the Chocolate Pots. Here's how to make it.

Salt-and-Pepper Crackers
Walnut Red Pepper Dip
prepared a day in advance and forgotten in the fridge until after dinner...

"Reunion" Dinner
Spanikopita, "Spinach Pie" made with Swiss Chard, so technically "σέσκλουpita".
All the Vermonters, Coloradans, and Utahites made it out West for Trish's wedding, and we were able to get together for a wonderful dish cooked up by MamaR. Here's a Wikipedia entry for Spanikopita.

Fabulous Cornbread and Gorgonzola Dressing
I came across this recipe on the internets and had to give it a try. It's a bit of work but the result is worth it--I'll probably do it again for a holiday like Thanksgiving.
Served it up with a big salad (lettuce from the garden) and two small New York steaks.

These are the ingredients from left to right: cubed french baguette, gorgonzola cheese, soaked porcini mushrooms (with the remaining liquid in the metal bowl), cornbread, and the leek, garlic, shallot, sage mixture before sautéing.

Chicken Enchiladas con Pepper Jack Queso
A friend pointed me to a recipe for "easy enchilada sauce" courtesy of Emeril Lagasse on the Food Network. I also read somewhere online that the chili powder used in enchilada sauce was from pasilla chiles--true or not, I can't say. I've got chili powder, but it doesn't say what kind of chile it's from, so I bought a bag of dried pasillas, and made my own in the mini food processor. When finished, the tomato paste flavor seemed to dominate the sauce, but when mixed with all the other flavors in THE WHOLE ENCHILADA (hee, hee), it was muy bueno. I built the enchies following the usual procedure, filling the sauce coated corn tortillas with a mixture of shredded cooked chicken, sauteed onion, garlic and a couple chipotle peppers in adobe sauce, which imparted a slightly smoky flavor, as well as a little spicy heat. Using pepper jack cheese upped the heat un poquito tambien.

Asiago Polenta alla Bolognese

That's what I'm calling it, anyway. Any genuine Italians out there wanna set me straight on what a Bolognese sauce is? Wikipedia describes it as "a meat-based sauce for pasta originating in Bologna, Italy. Bolognese sauce is sometimes taken to be a tomato sauce but authentic recipes have only a small amount of tomato."
Browned a beef chuck roast and a pork tenderloin, removed the meat, cooked the rest of the stuff (secret), added tomato sauce, tomato paste and water, returned the meat to the pot and cooked for a couple hours. Removed the meat again, ground about 1/4 of it, then added it back to the sauce.
I made the sauce a week ago and froze half of it. We had spaghetti with the freshly made sauce, then I defrosted some and we liked it much better on polenta. Well worth the stirring time. Stirred a little Asiago in at the last stage of cooking.

Simple Soup and Bread Dinner
Parsnip Soup with Toasted Pecans and Feta
Asiago Cheese and Cracked Pepper Bread
Ingredients:
* 4 tablespoons butter
* 2 large leeks, white part only, sliced
* 2 pounds parsnips, peeled, cut into 1 inch cubes
* 1 pound potatoes, peeled cut into 1 inch cubes
* 3 cups chicken or vegetable stock
* 3 cups water
* 2/3 cup half and half
* 6 tablespoons pecans, toasted, chopped
* Extra virgin olive oil, to drizzle
* 5 ounces feta cheese, crumbled
* Chopped flat-leaf parsley, for garnish
Melt the butter in a large saucepan over low heat. Add the leeks and sweat, stirring regularly for eight minutes or until softened. Stir in the potato and parsnips and cook for ten minutes, stirring every few minutes so that the vegetables don’t color.
Add the stock and water plus 1 tablespoon salt. Increase heat to high and bring to a boil. As soon as it’s boiling, reduce the heat to low, cover and simmer for 40 minutes or until potato and parsnip are tender. Remove from the heat.
Cool slightly, then blend with a stick blender (or in batches with a regular blender) until smooth. Stir in the cream and then taste. Add more salt if necessary. Reheat gently over low heat - don’t allow to boil or your cream will separate.
Just before serving, mix pecans with a small drizzle of oil to give them a nice gloss. Ladle soup into bowls and top with feta. Sprinkle over the pecans, add a grinding of black pepper, drizzle with olive oil and garnish with parsley.

Thanksgiving--NOT
From an undisclosed location out West: Buffalo Wings with Gorgonzola cheese dip/Autumn Vegetable Medley with Rosemary and Nutmeg/Butter Lettuce salad with Pesto Vinaigrette dressing.

First up, the pesto. Pine nuts, basil, Parmesan cheese, garlic, olive oil, fresh ground pepper.

Next, the Veggies: carrots, butternut squash, fennel, parsnips, and of course the fresh rosemary and fresh ground nutmeg. Fantastic!

Gorgonzola cheese dip for the wings: gorgonzola, Worcestershire sauce, milk, mayo and sour cream.
On the table. Using the pesto, oil and lemon juice, I made a pesto vinaigrette dressing for the salad. St. Pauli Girl in a frosted mug. Mmmmmmm...
