Eating Alone


When you eat alone, it's so tempting to just put a frozen pizza in the oven, but it's also not that hard to make something tasty, healthy and quick. This dish is made with whole wheat penne, homemade pesto (basil from our garden), spinach from Dave's garden, home-grown tomato, and fresh mozzarella, topped with roasted pine nuts. The only thing missing was Papadam!

Leftover magic in a curry/soy sauce with a fried egg, homemade pickle, and griddled whole grain toast.

Homemade Pickles!

I LOVE Pickles!

These were really easy refrigerator pickles, no boiling of jars necessary.
I'm still eating them even though I made them about a month ago.
They're are delicious, although maybe a little too spicy (I might leave out the garlic next time)
They turned out nice and crunchy.

Proof!

That not having an oven... or a stove for that matter.. is NO excuse for not eating well!

GOREmet Mountain Picnic



During my recent visit to Colorado, Megan and I packed some yummy food and hiked up Meadow Mountain (in the GORE mountains......get it?). It was a lovely site, beautiful day, great company. A nice rose` wine, some fresh baked bread, good cheese. What more could you want?
