Not Your Ordinary Potatoes 'n' Beans

Another one from eatingwell.com - Sweet Potato Fritters with Smoky Pinto Beans


Onion, poblano,spices,and black beans (instead of pintos) first.


Forming the sweet potato fritters.


Browning the fritters in the frying pan before they go in the oven.


Squeeze plenty of lime juice on them. Yummy.

Eating Alone


When you eat alone, it's so tempting to just put a frozen pizza in the oven, but it's also not that hard to make something tasty, healthy and quick. This dish is made with whole wheat penne, homemade pesto (basil from our garden), spinach from Dave's garden, home-grown tomato, and fresh mozzarella, topped with roasted pine nuts. The only thing missing was Papadam!

Homemade Pickles!

I LOVE Pickles!

These were really easy refrigerator pickles, no boiling of jars necessary.
I'm still eating them even though I made them about a month ago.
They're are delicious, although maybe a little too spicy (I might leave out the garlic next time)
They turned out nice and crunchy.

Proof!

That not having an oven... or a stove for that matter.. is NO excuse for not eating well!

GOREmet Mountain Picnic



During my recent visit to Colorado, Megan and I packed some yummy food and hiked up Meadow Mountain (in the GORE mountains......get it?). It was a lovely site, beautiful day, great company. A nice rose` wine, some fresh baked bread, good cheese. What more could you want?

Western Dining





Spent the last month on the west coast in my Nevada home where we pretty much ate the best food we could find ....at home. Still searching the Reno-Tahoe area for favorite restaurants but nothing to notable to report , except for Indian Curry and Brother Dave's house. Here's our home cooking; Grandmon's gnocchi's, Georgia's Italian Flag style antipasto platter, Papdam's Salad Niccola, and a platter from V. Sattui's Italian festival where Mama Rusty and I put on the feedbag and danced the night away.

Pastina ala Kimberly




Kimberly put together a delicious pastina dish, inspired by non other than papadon before his exit to the west side. Mixed with red and yellow tomatoes from the garden, garlic from the garden, and the perfect amount of Parmesan. And we washed it down with a wonderful greek salad, with the majority of produce coming from the garden as well. Words could not describe!

Curry-marinated Tempeh On Soba Noodles With Pea Sprouts


This was so good!


Tempeh Marinade:
Red Curry Paste, 1-2 tablespoons
Braggs Liquid Aminos (or soy sauce), to taste
Olive Oil, 2 tablespoons or thereabouts

I package of tempeh, cut into equal pieces and then sliced in half again to make 4 thin squares

marinated for about 15 minutes then fried on a hot griddle

Noodles:
Soba tossed in olive oil and Braggs
Add halved cherry tomatoes, about 1/2 a cup and a cup of pea shoots

There should be a better name for this salad... Any ideas?
It was super yummy. Healthy and refreshing.

Raw Vegetables:
sliced super-thin: Kale, Snap Peas, Yellow Green Beans, Yellow Squash, Raddish
minced: Ginger

Dressing: Brown Rice Vinegar, Braggs Liquid Aminos ("soy" sauce), Sesame Oil

The next day it was even better! This would be a great salad to bring to a BBQ or potluck because you could make it the night before and let it sit in the fridge for a day and get even more delicious.

Summer Tacos

A slight variation on the raw zucchini salad from a few days ago.
Cherry tomatoes added
And then used as filling on a corn tortilla with melted jack cheese.
Avocado garnish & a little hot sauce... Perfetto!
(Accompanied by a dry Sauvignon Blanc, and some dry Salami Toscana)

Surefire Way To An Excellent Meal?

Excellent Ingredients.
These are my spoils from the farmer's market this morning.
Breakfast was a few handfuls of delicious berries, just by themselves. Sometimes it's impossible to improve upon what nature provides.
And dinner? Not exactly sure yet, but I'm excited!

Raw Zucchini Salad

This was my super fast, super simple, dinner on the fly.
Raw zucchini, sliced thin
Black beans
Shallots, sliced thin
Salt & pepper
Oil & red wine vinegar

Fennel Crusted Mahi Mahi with Assorted Salads



A refreshing, light but filling meal for summer.

Choose a firm fish, such as in this case, Mahi Mahi, rub with a mixture of crushed fennel seeds, olive oil, salt and pepper. Bake or pan fry.

Served here with a refreshing parsley salad made with romaine lettuce, flat-leaf parsley, fennel, radishes, cucumbers, and red onions. And Roasted Golden Beet salad, with avocado and a creamy vidalia onion dressing. Even for those folks who don't like beets, this salad was a winner!

And don't forget the all-important gin and tonic and a slice of crusty bread.

Mama Mia



We decided to do it Tuscan style tonight and cooked everything either in the wood fired Chiminia or the cheapo grill I have. We roasted the clams on the grill ( freakin outstanding), baked the bread and the potatoes in the coals , roasted the peppers on top of the Chiminia stack, and fired up the porterhouse on the grill, added the anchovies and the wine and we were in heaven.
